Chef Singh says, “It’s important to stay hydrated and it can be easy to fall behind in your water intake. In addition to water and other healthy drinks, you can eat foods like a salad that can contribute to your fluid intake. Nobody wants to eat heavy food in this hot season. Here are some dishes that will keep you beautifully cool and refresh with a seasonal touch of fruits. Green Apple and Poppy Seeds Salad – Combine Green Apple, Poppy Seeds and Honey to make this light and refreshing salad Purple Punch – Just chill and enjoy the thirst-quenching sensation of this refreshing and classic drink, made with Black Plum.
Green Apple and Poppy Seeds Salad
Ingredients:
•2 nos. Green apple
•2 tsp Poppy seeds (roasted)
•1 tsp Honey
•1 tbsp hung curd
•5 no. black pepper (crushed)
•1 tsp lemon juice
•Alfa- alfa sprouts for garnishing (optional)
•Saindha namak to taste
Method:
Wash the apple thoroughly and cut into Julienne with skin, keep it into ice-water. Take a mixing bowl, add hung curd, honey, black pepper and salt, mix properly and make a dressing. Strain the apple through a strainer. Add apple and poppy seed to the dressing and mix it well. Garnish with alfa-alfa sprouts. Serve cold.
Notes: 1. This salad you can make a cold sandwich (for salad sandwich)2. You can roll it into chapatti (for chapatti salad roll)
Purple Punch
Ingredients
•200 gm. Jamun or Black Plum
•2 tbsp. Fresh lemon juice
•2 tbsp. castor sugar
•½ tsp. Black salt
•2 pinch Black Pepper
•200 ml. Water
•Crushed Ice as required
•4 sprigs of mint for garnishing
Method:
•Clean and wash Jamun.
•Boil Jamuns, sugar and water together in a saucepan till the pulp is absolutely softened.
•Allow cooling down to room temperature and then keep in the refrigerator for 30 minutes.
•Now de-seed the jamuns and use a blender to fine blend the pulp and juice together. Now strain using a fine strainer. Keep aside.
• Now take a Cocktail shaker, add crushed Ice, add Jamun syrup, black salt, black pepper, lime juice. Shake well.
•For serving, take a glass add some fresh Jamun pulp and pour the mocktail over it, top up with a spring of mint and serve chilled.
